Husband grilled on Sunday night, and we had our first dinner of the summer out on the porch.  This was an event that required celebration – and in turn inspired my hunt for a perfect celebratory summer sip.  Flipping around my cookbooks for inspiration, I found this recipe I’d copied down for California Sunshine Slush (from Cooking Light, Light Cooking for Two circa 1995 that I snagged from my parents’ shelves).  I had some pear juice that sorely needed a good home, but I definitely didn’t have the patience to sit around waiting for this thing to freeze so I made some adaptations based on what I had in my pantry/freezer, and the Colorado Summer Slush was born.

And it was good.

Here’s what you’ll need (makes 4 drinks):

Blend the first four (or five if you’re making an adults-only version) ingredients.

If you’re patient (unlike me), put the mixture in the freezer for a while to make it really slushy.  Using the frozen concentrate and frozen strawberries makes this step a little less necessary, but if you’re using fresh ingredients or juice, I’d definitely recommend some time in the freezer.

Pour mixture into glasses, top with ginger ale to taste and stir.

Sit on the porch with your tasty beverage, have someone grill you some amazing pork tenderloin with asparagus, and enjoy the Colorado summer!

Another one of the “must-see” places in Colorado Springs – the stunningly unique Air Force Academy Chapel.  I didn’t take too many photos since it’s really more of a place to think than to be a tourist, but here are a few of my favorites.

And another little prayer for those we honored on Memorial Day – I don’t think I’ll ever get over it, or that I should.  It’s a dear, dear price for our liberty!

Alright, that’s enough pensive Mondays for me…promise!

This post got me thinking so I decided to take action…so this weekend is surely going wonderfully, as I am “out of the office,” so to speak – up in the mountains away from every technology I can manage (save, importantly, my camera and my car!)  Been gone since Friday after work and should be back around tomorrow, but if you’ve missed me, that’s why!

Here are some favorites from this past week to keep you entertained:

1. Sunset over the volleyball courts.

2. Toes in the sand, it’s a good feeling.

3. Wishing that this was my permanent office – outside with a big dose of sunshine.

4. Lovely summery flowers on my table that have survived a whole week without being eaten (thanks, cat.)

5. Yeah, I’m one of those.  At least I’m not chasing him out of trees.

6. Definitely one of my prized possessions – and this one’s a blank slate – so thrilling.

7. The only tickling I approve of: ivories!

8. Stripes and florals are one of my favorite combinations currently, and these shoes have been seeing a lot of action.
